As the story goes, Dingus McGee was a well seasoned character of the Old West with a taste for adventure and good food.
The details of his life remain a little sketchy, but saucy stories abound.
Legend has it that Dingus was born in the city of New Orleans, and was later befriended by an old cook at the bunkhouse where he was raised. The old cook passed along the art of Cajun cooking to your Dingus. It was a talent Dingus would never forget. From his boyhood on, he was know to carry a bottle of Cajun Ketchup where other men holstered a gun.
When Dingus was just fifteen, he stowed away on a sailing vessel bound for San Francisco. Upon being discovered, he traded his passage for service as the ship’s cook. Chained to the gallery stove, Dingus went on to earn the love and respect of his shipmates by creating the seafood sauce which still bears his name.
It was 1849, and the Gold Rush was on. Dingus arrived in California and settled for a while at a miner’s camp in the Sierra Foothills. It is said that it was here that Dingus created his Famous Barbecue Sauce. It didn’t make him any richer, but it did get him invited to every cookout from Sacramento to the Oregon border.
Yes, Dingus McGee was quite the character,
a rascal and a culinary artist.
Today his spirit and his sauces live on in Auburn. Immortalized here for you to enjoy!
